We’re always looking for fresh, healthy and delicious meals we can pull together in an instant- and this 10 Minute Meyer Lemon and Lavender Broiled Trout is one of the easiest healthy meals you can find. If you’re a bit skeptical of trout, no need to be! This method gives you light, delicious, and buttery tasting fish with no fishy taste and no fishy smell from cooking it.
Seriously- this way to cook trout without a fishy taste or smell is amazing! We almost never ate fish growing up because my dad has a major aversion to fishy tastes and smells. He about dies every time we made crabs in the house and only really ever ate shrimp. So when my mom would visit us without my dad, and we cooked trout or salmon, she was always amazed at how making fish this way didn’t stink up the whole house for days after. And as someone who is a bit skittish of overly fishy-fish myself, this trout (a fish I usually used to avoid) is amazingly delicious!
The meyer lemon and lavender accents are a night, bright addition to the gentle fish flavor. Don’t overdo the herbs de provence seasoning- you just want a touch of flavor. For this reason, I am calling for herbs de provence salt. My favorite spice shop (Savory Spice) has an excellent Herbs de Provence salt – but you could mix herbs de provence with some sea salt as well. I am recommending Savory Spice’s blend because it is very lavender forward and just the right balance for fish- which can get easily overpowered by some blends of Herbs de Provence.

- 3 rainbow trout filets
- 1 meyer lemon, sliced thin
- 1 tsp herbs de provence salt
- pepper, to taste
- On a baking sheet, lay down a piece of foil.
- Place trout on top of foil.
- Generously add pepper.
- Sprinkle herbs de provence salt over filets.
- Layer trout with meyer lemon slices.
- Broil 4 to 5 inches away from burner on high for 10 minutes, or until fish is opaque and flaky.
