Light, delicious and filling – Apple Chips and Sunflower Seed Butter snacks are a perfect breakfast for mornings on the go!
I have a hectic summer full of travel coming up – there’s so much going on!
First, I’m headed to Kansas City today for a blog networking retreat, then my kids my husband and I are all going to Ireland, and finally my kids and I will be heading to Baltimore to hang with my parents for a while before driving to their house in Seaside Florida to hang out with my brother, my sister in law, and celebrate my nephews birthday.
I’m tired just reading that!!
One of the things I am trying to get better at as I travel more is eating well beforehand.
I am one of those travelers who usually wings it (pun intended), but I’ve relaxed a lot more at airports after getting my act together a bit and packing wisely, as well as giving my self enough time in the morning to fuel up with some healthy food that won’t weigh me down.
This little snack is perfection for a busy morning – it takes zero cooking, can be assembled and eaten in a matter of minutes, and is full of protein and fruit-based carbohydrates for energy.
And it’s just plain pretty!! (which is a requirement for me to eat healthy…. sad but true)
These are also perfect for on-the-go mornings because it is a totally portable snack that needs no refrigeration or prep- you can use plastic silverware to assemble it, even in an airport!

- 6 apple chips
- 1/4 cup sunflower butter
- 1/4 cup freeze dried raspberries and blueberries
- Generously slather apple chips with sunflower butter, top with freeze dried berries.
