Baked Radish Chips


No guilt summer snacks are NOT always easy to come up with and make- outside of fresh fruit and veggies.

When I want a salty treat, I usually crave chips. Since trying to mostly go grain and corn free this summer, my hubby and I have been trying out all sorts of interesting recipes that satisfy our sweet and salty cravings, without breaking the bank. These Baked Radish Chips do just the trick!

These are ridiculously easy to make.

First, wash your radishes, and reserve the greens (you can toss them in a salad as a spicy alternative to arugula or saute them like spinach.)

Next, slice your radishes with a mandoline or by hand.

I did chips of all different thicknesses- the thicker the chip, the more chewy it will be. The thinner, the crunchier and more caramelized it will be. Experiment with different thicknesses to find what you prefer (I actually liked the mix- the different textures and slight caramelization flavors really blended nicely together.)

Toss with a drizzle of olive oil and sea salt, and place on a nonstick cookie sheet.

Bake at 350 degrees for 12 minutes, or until slightly browned.

Store in an airtight container for up to one week!
