These carrot cake cookies are quick and easy to whip up and have a spicy holiday flavor!
- ½ cup vegetable oil
- 2 eggs
- 1 15 oz box carrot cake mix
- Preheat oven to 350.
- Mix ingredients in a bowl until well combined.
- If mix is too dry, add a couple drops of water at a time to loosen- but mixture should be thick.
- Add to well greased cookie sheet.
- Bake until toothpick inserted comes out clean- about 15 minutes.
