Easy Cheesy Chorizo Egg and Potato Skillet

In my 20’s, I feel like I perfected the art of brunching. Not the fancy kind full of stuffy restaurants and reservations- the bottomless bloody mary, red beers, and chicory coffee fueled endeavors to revive ourselves from a long night. I had a great group of friends who loved hanging out and reliving the night’s antics, tell stories, and joke around as long as we could the next morning over some deliciously spicy food. It was the most amazing way to end a weekend before a long week back at work! Being in Denver, that usually consisted of hearty skillets full of spicy chorizo, roasted green chiles, and cheesy piles of eggs- either all rolled up in a tortilla or not.

The cheesy chorizo egg and potato skillet is a hearty, flavorful dish that combines spicy chorizo, soft scrambled eggs, and tender potatoes under a melty layer of cheese, creating a perfect blend of textures and tastes. It’s a versatile meal that can be enjoyed at any time of day, offering a satisfying comfort food experience with a spicy kick.

How to Make Cheesy Chorizo Egg and Potato Skillet

First assemble the following ingredients:

  • Olive oil (2 tbsp) – Olive oil adds a subtle, fruity base note that enhances the overall richness and depth of the skillet’s flavors.
  • Fingering potatoes (1 lb) – Fingerling potatoes bring a buttery, nutty taste with a firm texture that contrasts nicely with the softer ingredients.
  • Bell pepper (1) – Bell peppers introduce a sweet, slightly bitter flavor that brightens the dish with a crisp, colorful freshness.
  • Onion (1) – Onions contribute a pungent, slightly sweet flavor that becomes mellow and aromatic when cooked, adding depth to the dish’s savory profile.
  • Chorizo sausage (8 oz) – Chorizo sausage packs a spicy, smoky punch, infusing the skillet with its rich, paprika-laden flavors and meaty texture.
  • Eggs (8) – Eggs add a creamy, delicate richness, binding the ingredients together with their gentle, custard-like flavor.
  • Hot sauce (1 tsp) – Hot sauce brings a tangy heat that cuts through the richness, allowing you to adjust the skillet’s spice level to your taste.
  • Cheddar cheese (1 cup) – Cheddar cheese melts into a gooey, sharp layer of comfort, adding a tangy depth that complements the spicy chorizo beautifully.
  • Sea salt (1/2 tsp) – Sea salt enhances the natural flavors of the other ingredients, grounding the dish with its essential mineral taste.
  • Green onions (1/4 cup) – Green onions sprinkle a mild, slightly peppery bite into the mix, adding a fresh, vibrant finish.
  • Sour cream – Sour cream introduces a cool, tangy contrast to the skillet’s warmth, balancing the spiciness with its creamy smoothness.

Use this Method

Cook Potatoes. In a large, heavy pan, heat oil until shimmery. When oil is very hot, but not smoking, add the fingering potatoes, stir occasionally to keep from burning.

Add More Veg. When potatoes are lightly browned after about 8 minutes, add bell pepper and onion. Stir occasionally and keep cooking on high until lightly browned, stirring occasionally.

Add Meat. Add chorizo to pan, fully cook until browned, about 8 minutes more. While chorizo, potato, and onions are cooking, whisk the eggs, hot sauce, cheese, and sea salt till combined.

Add Eggs. When chorizo is cooked add eggs to the pan and stir till eggs are cooked. Top with diced green onions and sour cream if desired and enjoy!

Tips and Tricks for Making Chorizo Skillet

Pre-cook the Potatoes: Dice and parboil the potatoes before adding them to the skillet to ensure they are fully cooked and tender, offering a better texture contrast to the crispy chorizo.

Drain Chorizo Fat: After cooking the chorizo, drain off some of the excess fat to prevent the dish from becoming too greasy, keeping the flavors balanced and the texture appealing.

Use Fresh Chorizo: Opt for fresh, high-quality chorizo for more robust and authentic flavor, as it significantly impacts the overall taste of the dish.

Low and Slow Eggs: Cook the eggs on a low heat to avoid overcooking, ensuring they remain soft and gently set, complementing the other hearty ingredients.

Layer the Cheese: Sprinkle cheese both within the skillet mixture and on top before broiling, to achieve gooey pockets of cheese throughout and a crispy, golden top layer.

Season as You Go: Season the potatoes and eggs separately as you cook them to ensure every layer of the dish is flavorful, adjusting the seasoning to your taste.

Add Vegetables for Balance: Incorporate diced bell peppers or spinach into the skillet to add color, nutrition, and a slight sweetness that balances the savory chorizo and rich cheese.

Finish Under the Broiler: To achieve a beautifully melted and slightly browned cheese top, briefly place the skillet under the broiler, watching closely to prevent burning.

Customize Your Heat Level: Adjust the amount of chorizo or add chopped jalapeños to the skillet based on your preferred spice level, making the dish as mild or as fiery as you like.

Serve Immediately: For the best experience, serve the skillet hot directly from the stove, allowing the cheese to be enjoyed at its most melty and delicious state.

Garnish Wisely: Finish with fresh garnishes like chopped cilantro, diced avocado, or a squeeze of lime to add a fresh contrast to the rich, savory flavors of the skillet.

Choose the Right Cookware: Use a well-seasoned cast iron skillet or a non-stick pan that can go from stovetop to broiler, ensuring a seamless cooking process and easy serving.

FAQS

Can I substitute another type of sausage for chorizo?

Yes, you can substitute with Italian sausage, andouille, or even a plant-based sausage for a different flavor profile or dietary preference. Keep in mind that the flavor will change based on the type of sausage used.

How can I make this dish vegetarian?

For a vegetarian version, replace the chorizo with a vegetarian sausage or add extra vegetables like mushrooms, bell peppers, and zucchini. You can also add black beans for protein.

What type of potatoes work best in this dish?

Waxy potatoes like Yukon Gold or red potatoes hold their shape well and have a creamy texture when cooked, making them ideal for this skillet dish.

Can this skillet be made ahead of time?

While best served fresh, you can pre-cook the chorizo, potatoes, and vegetables, then quickly reheat them in the skillet before adding the eggs and cheese when ready to serve.

How do I prevent the eggs from overcooking?

Keep the heat on low when adding the eggs, and remove the skillet from the heat as soon as the eggs are set to your liking to prevent them from becoming rubbery.

What’s the best cheese to use in this dish?

A blend of shredded cheddar, Monterey Jack, or Mexican cheese blend works well, offering a good melt with a balance of flavor that complements the chorizo and potatoes.

Can I bake this in the oven instead of making it on the stove?

Yes, after sautéing the chorizo, potatoes, and vegetables on the stove, you can transfer them to an oven-safe dish, add the eggs and cheese, and bake at 350°F until the eggs are set.

How can I add more flavor to the dish?

Consider adding spices like smoked paprika, cumin, or a pinch of cayenne pepper for extra depth. Fresh herbs like cilantro or chives also add a nice touch when sprinkled on top before serving.

Is it necessary to peel the potatoes?

Peeling the potatoes is optional. Leaving the skin on can add texture and nutrients, but if you prefer a smoother texture, you can peel them.

Can I freeze leftovers?

This dish is best enjoyed fresh, as the texture of the eggs and potatoes might change upon freezing and reheating. If you have leftovers, it’s best to refrigerate them and consume within 1-2 days.

Fresh Salsa or Pico de Gallo: A spoonful of fresh salsa adds a vibrant, tangy kick that cuts through the richness of the cheese and chorizo, refreshing the palate with each bite.

Sour Cream: A dollop of sour cream introduces a cool, tangy element that soothes the heat from the chorizo, enhancing the dish’s depth with its creamy texture.

Chopped Cilantro: Sprinkling fresh cilantro over the top adds a burst of herbal brightness that complements the spicy and savory notes, lending a refreshing finish.

Refried Beans: Serving refried beans on the side offers a smooth, comforting addition that pairs well with the spiciness of the dish, adding a creamy texture and a rich, earthy flavor.

  1. The recipe plugin is still not working on this page. If it’s being unusually difficult to fix, can you at least put the recipe in the post plain text until the module works? It might not be easily printable but at least it will exist.

  2. Umm, I think the recipe module either malfunctioned or is not compatible with Chrome?
Nowhere on here is a recipe, and where I think it should be, it just says [amd-yrecipe-recipe:15]
