I love simple, delicious one pot meals that are comforting, warm, and full of flavor.

When I think Irish food, I immediately think of comfort – while Ireland gets a bad rap for food, everytime I have been to Ireland I’ve only ever had amazingly delicious food that is bursting with comforting flavors and fresh, beautiful ingredients.

While Irish food is often simple and unfussy, it is delicious – and great for large, comforting dinners that the whole family can eat.

One of my favorite comfort dishes is creamy, buttery colcannon.

If you’ve never had colcannon (one of my favorite Irish dishes, hands down), you are missing out!

It is delicious, rich, and comforting- and so easy to make. I’m kicking this One Pot Cheesy Sausage Potatoes and Cabbage colcannon recipe one up a bit with some sausage (we used german sausage, but you can use bratwurst, polska kielbasa, whatever you’d like) and lots of cheese.

This meal is so comforting and delicious, it can turn any day around.

It’s easy to prepare and only takes one pot- so there’s no messy cleanup after. It’s perfect to make and enjoy all snuggled up on a cool night, and let you troubles fade away!

 Tips to Perfect One Pot Cheesy Sausage Potatoes and Cabbage Colcannon

Use leftovers. This recipe is a great way to use leftover mashed potatoes or leftover mashed potatoes.

Cheesy Sausage Cabbage and Potatoes

Ingredients

  • 4 german sausage links diced into 1/2″ slices
  • ½ head of green cabbage diced into small strips
  • 2 cups chicken stock
  • 5 large russet potatoes diced into 1/2″ cubes
  • 2 tbsp butter
  • 1 cup cheddar cheese
  • ½ cup fresh shredded parmesan cheese
  • green onions to garnish

Instructions

  • On medium high heat, add sausage into pan with diced cabbage.
  • Brown, stirring occasionally to prevent burning.
  • When cabbage and sausage are browned, add chicken stock and potatoes.
  • Cover with a lid and cook until stock is absorbed and potatoes are soft.
  • Reduce heat to low.
  • Mash potatoes in pot with a fork or the back of a wooden spoon (they will be a bit lumpy, that is fine!)
  • Add in cheese and butter, stir well to combine.
  • When cheese and butter are melted, remove from heat and serve!

Notes

If you have baked potatoes or leftover mashed potatoes, this recipe is an awesome way to use them up!

    This was very good, although it took me a little while to make it hit the spot! Glad I came across this recipes thank you for sharing. I did forget to add the parmasean until the last minute but looked pretty on top with the onions.

  2. What are German Sausage links like? Are they already cooked like pre-cooked Polish Keilbasa or more like raw Italian sausage that needs to be throughly cooked?

    1. Deb – it all depends on your store. I used pre-cooked links in this recipe, but you can quickly boil some for this if you can only find uncooked links.

    Why wait for fall…. I had several heads of cabbage given to m e that I had to cook. Made this a few nights ago for the first time and my husband loved it. Making it again tonigh, but had to double it. Killer recipe!

  6. How do I not have this dish in my life? Or in front of me at this very moment? I sounds amazing and I love that you added sausage. And all that cheese! Sorry to hear about the move though… moving is SO hard! We moved at the beginning of the year and had a lot of renovations to the new house that were so stressful.
