Every summer, we have one crop from our backyard garden that just goes WILD. And most people I know have the same issue- zucchini and yellow summer squash seem to grow faster than you can ever keep up. But that’s not a bad thing, since they both are so easy and delicious to cook with for summer meals- though I do tend to run out of ideas for how to prepare them and change things up. To get you ready for your summer bounty, I wanted to share our absolute favorite way to cook summer squash- Easy Grilled Yellow Squash!
This is perfect for a bbq or cookout, because you can toss the squash on right alongside your burgers or brats- no need for extra pans or equipment. And when I say easy- there are just four ingredients, and just a few simple steps.
What we don’t add in ingredients we more than make up for in flavor here- this recipe really brings out a subtle nuttiness in the yellow squash that pairs so perfectly with a caramelized chargrilled crust. This pairs perfectly with steaks, but we like it alongside burgers too as a veggie alternative to salad. Since these squash go right on the grill with the rest of dinner, there is very little to clean up, and you’re not wasting additional energy or warming up your kitchen by having to turn on the stove. Plus, you can easily make these camping for a delicious and healthy side dish!
I hope you enjoy this great dish as much as we do. While it works on any grill, squash is even more delicious over charcoal or wood chips. I like cowboy charcoal or apple wood for grilling veggies- gives it a subtle smoky flavor without overpowering the dish.
- 4 yellow summer squash, washed thoroughly and sliced into thin strips
- 1 tbsp olive oil
- sea salt
- brush slices of squash with olive oil
- liberally season with salt and pepper
- place on hot grill- directly on grill grate
- cook 4 minutes on each side, until soft and slightly charred.
- serve warm and enjoy!
