These potatoes are so easy to make, and incredibly delicious. You can modify them by picking your favorite cajun spices (it sounds odd, but I prefer Paul Prudhomme's Seafood Blackening Seasoning - it has a perfect balance of herbs and I like the salty zip), or a super hot cajun mix.
Whichever spice mix you prefer is perfect- potatoes flavor is pretty neutral, so find one you truly love!

Ingredients
- 1 lb fingerling potatoes, cut into ¼ths
- 1 ½ tablespoon cajun seasoning
- 2 tablespoon honey
- 2 tablespoon peanut or other neutral oil
Instructions
- Preheat oven to 400 degrees.
- Place potatoes on baking sheet, toss in oil and honey, and then sprinkle on spices.
- Toss to evenly distribute.
- Bake at 400 until crispy and golden brown.
