Buttery, sweet and rich – super easy and quick peach raspberry oatmeal crumble bars are a huge hit with my family and easy for kids to make! Palisade peaches are my favorite thing of summer in Colorado.

Peach raspberry oatmeal crumble - yum!

Since Colorado’s western slope has a high desert climate, peaches there grow big in the hot summer sun, but are extra sweet from crisp, cool nights at high elevation. They are the best in late summer – this is one of the last week’s to enjoy them fresh here (cue sound of me sobbing…).

I try to incorporate peaches into some delicious summer treats every summer – and this year, my kids and I came up with a raspberry peach crumble we really, really love.

It is simple, with super basic ingredients we always have on hand, easy enough for kids to help with, and SO stinking good.
