Palisade peaches are my favorite thing of summer in Colorado.
Since Colorado's western slope has a high desert climate, peaches there grow big in the hot summer sun, but are extra sweet from crisp, cool nights at high elevation. They are the best in late summer - this is one of the last week's to enjoy them fresh here (cue sound of me sobbing...).
I try to incorporate peaches into some delicious summer treats every summer - and this year, my kids and I came up with a raspberry peach crumble we really, really love.
It is simple, with super basic ingredients we always have on hand, easy enough for kids to help with, and SO stinking good.
This raspberry peach oatmeal crumble is delicious and quick - I know your kids will like it as much as mine do!!!

Raspberry Peach Oatmeal Crumble Bars
Peach Raspberry Oatmeal Crumble Bars
Ingredients
- ½ cup brown sugar
- 1 cup all-purpose flour
- ¼ teaspoon baking soda
- ⅛ teaspoon salt
- 1 cup rolled oats
- ½ cup butter, softened
- ¾ cup raspberry jam, seedless
- 1 large peach, ½ sliced thin and ½ diced into small bites
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Grease one 8 inch square pan, and line with greased foil.
- Combine brown sugar, flour, baking soda, salt, and rolled oats.
- Rub in the butter using your hands or a pastry blender to form a crumbly mixture.
- Press 2 cups of the mixture into the bottom of the prepared pan.
- Spread the jam to within ¼ inch of the edge.
- Add diced peaches above jam.
- Sprinkle the remaining crumb mixture over the top, and lightly press it into the jam.
- Press sliced peaches on top.
- Bake for 35 to 40 minutes in preheated oven, or until lightly browned.
- Allow to cool before cutting into bars.
