Simple Delicious Pizza Eggs

Pizza eggs are so delicious, and so easy. They are filling, and have enough “vitamin G” (grease) to soak up whatever is still haunting you from the night before. We used to eat these all the time when on ski trips- and they’d fill you up to get you going all day on the slopes.

I don’t know exactly where pizza eggs came about. Seems like a very odd thing but there are always good uses for pizza. This recipe is a great way to use your pizza for a wonderful breakfast the next day after a party. I’m not a huge fan of pepperoni with eggs but I know a lot of people who do. Any of your favorite pizza toppings will work- let me know what YOUR favorite combo is!

Tips and Tricks for Perfect Pizza Eggs

Make it gluten-free. This recipe is great because you can use all sorts of pizzas- and it can be made gluten free (start off with gluten free pizza), meat free, etc!

Mix it up. You can use any type of pizza for this recipe. My personal favorite combination is extra cheese, mushroom and sausage- it works beautifully with the eggs!

How do I store leftovers?

Leftovers can be kept in an airtight container in the refrigerator for 3-4 days. I prefer to make these fresh though.

Can I just add cheese and what I would use to make pizza?

Yes, you can of course just use pizza ingredients to make these if you prefer.

Pizza Eggs

These delicious pizza eggs are my go-to method of using up pizza for breakfast the day after a party! Yum!

Ingredients

  • 6 eggs
  • 2 slices leftover pizza- any topping gluten free fine
  • 2 tbsp butter or oil

Instructions

  • Crack eggs and place in large bowl.
  • Whisk until fully combined and slightly frothy.
  • Microwave pizza slices for 10 seconds just to soften up cheese.
  • Using a fork or your fingers, scrape toppings and cheese off pizza.
  • Stir in to eggs, whisk to completely combine.
  • In a hot pan on medium high, melt butter.
  • Add egg combination, and stir until fully cooked- about 6-10 minutes.
  • Serve and enjoy!
