I will admit- I get a little creeped out by gamey tasting meat. I am not the first person to line up when lamb is for dinner- but I found a few ways I really LOVE to prepare lamb.
These super quick lamb chops are a fabulously easy way to impress guests at a dinner party- they only take a few minutes to cook and involve extremely little work.
Best off- if you don’t have a grill you can still get a grilled flavor.
To make these insanely delicious and easy little showstoppers, you’ll need:
6 lamb rib chops, preferably frenched
a ziploc bag
6 cloves garlic, diced
fresh rosemary, 3 sprigs (more or less depending on your preferences)
salt and pepper, to taste
a ziploc bag
cast iron pan or hot grill
First, you will want to marinate the chops for at least 2 hours, to overnight.
Place the chops in a ziploc bag and add in olive oil enough to coat the chops, then add in garlic, rosemary salt and pepper.
Mix to cover chops completely and let marinate.
When ready to cook, place chops on a hot grill or in a hot cast iron pan. We’re talking very hot- you want to quickly brown the meat.
Tip: If using cast iron but you want a smoky flavor like a grill would give, cook them in a little bit of bacon grease! It will give a great smoky flavor!
Cook 2-4 minutes on each side until browned.
Ideally, you will remove after each side is browned and serve medium rare, but if you’d like it a little more done (the meat will be a little tougher), go ahead and cook it on each side a second time.
Remove and serve immediately.
