Easy Simple Skillet Baked Chicken Fajitas

Easy chicken fajitas are sort of a dream – they are so delicious, fresh, and bursting with flavor. I love making fajitas, but I hate all of the sautéing in a hot and smoky skillet on busy weeknights… especially when I dont feel like cleaning.

This fajita skillet dinner is so simple and easy – just chuck it in the oven and it’s done in under 20 minutes with only one pan to clean up. You still get that delicious sizzling meal!

This dinner is the easiest way to get restaurant style fajitas at home. Make sure you add your cast iron pan to the oven before adding the food, as it helps cook quickly.

If your chicken is sliced thin, be sure to check at about 10 minutes, as it might cook a bit faster the thinner you slice. For thicker chicken, it might need a couple minutes more – just check the internal temp as you go to be sure.

How to make these Simple Skillet Baked Chicken Fajitas

First you will need to assemble:

  • Oil – this will help the chicken and other ingredients not stick to the pan.
  • Chicken – you can use beef but whatever protein you pick will need to be thinly sliced.
  • Bell Peppers and Onions – this duo is perfect and classic for fajitas, its perfect with the taco seasoning.
  • Taco Seasoning – I like to use premixed seasoning, see tips and tricks below if you want to mix your own.
  • Lime – lime juice adds a hit of acidity and fresh lime is a wonderful garnish
  • Garlic – garlic is a perfect herbaceous hit and adds a wonderful earthy taste.

Use the following method for your Fajitas

Prep food. Add all the ingredients to a pan. Drizzle with oil and sprinkle with the taco seasoning. Toss to combine.

Bake. Bake until the chicken is opaque and cooked through.

Serve. Serve your fajitas immediately with beans, rice, and tortillas. You can enjoy it in a tortilla or as a salad topping.

Tips and Tricks for Perfect Skillet Baked Chicken Fajitas

Don’t Overcrowd the Pan. If you want crispy veggies and chicken its best to not overcrowd the pan. You can always use more than one pan or a sheet tray if necessary.

Use as a salad. Most people think of fajitas only in tortillas but this is a perfect topping for salad.

Any leftovers can be kept in an airtight container in the fridge for 3-4 days. Reheat in the oven or microwave.

Can I cook these on the grill?

Yes, if you are using a cast iron skillet you can put it straight on your grill and cook, stirring occasionally.

Ingredients

  • 2 tbsp oil
  • 1 lbs Chicken 2 breasts, sliced thin
  • 1 bell pepper sliced into strips
  • 1 onion halved and sliced into thin crescents
  • 2 tbsp taco seasoning
  • 1 lime – 1/2 juiced, 1/2 sliced into thin rounds
  • 12 cloves garlic

Instructions

  • Preheat oven to 425 degrees, with heavy cast iron pan in the oven.
  • When pan is hot, add oil and ingredients and toss in taco mix.
  • Toss well.
  • Bake at 425 15-20 minutes, until chicken is opaque and 165 degrees internally.
  • Serve immediately with beans and rice, in tortillas, or on a salad with cheese!
