Spicy Skillet Linguica Queso Dip

It’s only January- but it’s time to start planning for the biggest day of the year in a lot of households. No, I’m not talking Christmas, Easter, or any other holiday- I am talking big game time! It will soon be football playoff season, and then time for the biggest game of them all, and that often means figuring out delicious, full of guilt, cheesy, rich, spicy, foods to bring to parties and tailgates.

My guilty pleasure every year? QUESO. Seriously. If it was acceptable in society (or by my waistline), I’d drink queso instead of water. I’d wash down salty pork parts with a big, giant glass of cheesy goodness. I literally love queso that much!

I love this recipe just because of how easy it is – and free of preservatives! It’s based all on real foods- no fake cheese or velveeta.

This is one of the most delicious big game appetizers ever- and it is so easy!

While there are a couple ingredients listed as garnish, the actual dip is just four ingredients – and just one pan for this delicious appetizer!

This stuff is SO good- it is addictive and I can’t stop eating it! It’s really delicious on tostadas and in tacos and quesadillas as well. I love how stretchy and creamy this dip is – and how it’s free of preservatives and fake cheese. It’s fresh and delicious, and so easy!

How to make Spicy Skillet Linguica Queso Dip

First you will want to assemble the following ingredients:

  • Linguica sausage – this delicious sausage will need the casing removed
  • Green chile sauce – this is the heat to the queso. I use 505 honey roasted green chile sauce.
  • Cacique enchilada cheese – this flavored cheese is perfect for this recipe. You can also use queso fresco.
  • Mozzarella– you can also use the fiesta blend or cheddar cheese. Mozzarella will make a stringier queso.
  • Creama Mexicana – this is a Mexican style sour cream but you can use regular sour cream or whole milk plain yogurt.
  • Tomato – this needs to be diced to garnish
  • Green onions – these add a fresh garnish

Once you have assembled the ingredient use this method

Cook sausage. In a large skillet brown the sausage.

Add Cheese. IN the same skillet add the cheese and green chile sauce. You will need to mix well and evenly to keep it from burning on the bottom. Add the mozzarella at the end, stir well.

Garnish. Once everything is melted add the green onions, tomatoes, and crema mexicana to the top. Enjoy by yourself or share with friends!

Tips and Tricks for Perfect Spicy Skillet Queso

Keep it in a mini slow cooker. One of the best ways to keep the desired consistency to your queso during a party of get together is to keep it in a mini slow cooker such as this one. Or keep it in a fondue pot.

Turn up the heat. You can add more heat by adding some fresh jalapenos to your dip or more green chili sauce – yum!

How long will this spicy skillet queso dip last?

You will want to store the queso in a sealed container for 3-4 days. When reheating you may need to add a dash of milk to get the desired consistency back.

Can I make this vegetarian?

To make this vegetarian simply omit the linguica sausage, you can substitute some cooked vegetables if you would like.

How can I add a smoky flavor to this queso?

If you are trying to get a smoky flavor you can add some chipotles in adobo sauce.

Ingredients

  • 6 oz linguica sausage casing removed
  • 8 oz green chile sauce I use 505 honey roasted green chile sauce
  • 1 package cacique enchilada cheese cut into small 1/2″ cubes
  • ½ cup shredded mozzarella fiesta blend, or cheddar cheese
  • ½ tbsp crema mexicana
  • 1 diced tomato to garnish
  • Diced green onions to garnish

Instructions

  • In a large, nonstick pan, heat linguica sausage, crumbling as it browns.
  • When sausage is fully cooked, add cubes of enchilada cheese and green chile sauce.
  • Stir well to help cheese melt evenly and mix without burning.
  • Add in shredded mozzarella, stir well.
  • When queso is fully mixed, Top with green onions, diced tomatoes, and crema mexicana.
