Tequila Habanero Braised Short Ribs are a delicious, fall apart tender short rib recipe that are a little sweet, a little smoky, and delicious in tacos, sandwiches, or in taco stuffed potatoes!
About a year ago, we bought a hog from a friend of ours who raises organic pigs – and we’ve been slowly eating our way through our massive haul.
One of my favorite cuts of all has been short ribs, by far – something I don’t actually have a ton of experience cooking.
We didn’t really grow up eating short ribs, so a lot of the recipes I’ve come up with were through trial and error – and one of my absolute favorites is this amazing habanero tequila taco meat recipe!
These ribs are seriously perfection.
They are a bit sticky, and are so rich and full of flavor.
To make these even smokier, pre-blister your habanero peppers. I like to just toss them in a pan over medium high, let them blister on all sides, then remove and slice.
Just be careful when cutting the peppers – I wear gloves to avoid skin contact with the oils. I once handled habaneros without them and got pepper oil all over my hands – it burned all night long.

Tequila Habanero Short Ribs
Tequila Habanero Braised Country Ribs
Tequila Habanero Braised Short Ribs are a delicious, fall apart tender short rib recipe that are a little sweet, a little smoky, and delicious in tacos, sandwiches, or in taco stuffed potatoes!
Ingredients
- 2 tbsp olive oil
- 2 lbs short ribs, country ribs
- 1 oz anejo tequila
- 3 habanero peppers, diced and de-seeded
- 1 tbsp honey
- 1 large onion, diced
- 1 tbsp cumin
- 1 tbsp chili powder
- 2 tbsp garlic powder
Instructions
- Preheat oven to 250 degrees.
- In a large dutch oven, heat oil on a stovetop on medium high until shimmery.
- Generously season short ribs with salt and pepper.
- Add short ribs to pan, brown on all sides.
- Turn heat off stove.
- Drizzle short ribs with honey and herbs, then add tequila and peppers.
- Top with diced onions and place in oven.
- Bake 3-4 hours, until meat is tender and falls off the bone.
