Steaks, olive oil, unsalted butter, thyme, shallots, blue cheese, chives, salt and pepper.

Brush down the steak with olive oil. I like to use a silicone basting brush.

Season liberally with salt and pepper and let it rest for at least 30 minutes at room temperature.

While the steak is resting, combine the shallot, blue cheese, chopped chives, softened butter, sea salt, and pepper in a bowl. Whisk well.

Once the skillet is hot, cook the steaks for two minutes on either side.

Add thyme and butter to the skillet. Cook for 4 minutes, then flip them and sear for an additional 4-5 minutes.

Allow the steaks to rest on a wooden cutting board.

Add scoops of butter to the top of each steak. Cover with aluminum foil to seal the heat in for about 10 minutes.
