Caprese Burgers

Ingredients

  • 12 to matoes medium sized (I LOVE trader joe's kumato tomatoes for these)
  • fresh mozzarella cheese sliced into thin rounds
  • 1 large leaf basil per tomato
  • salt and pepper to taste
  • olive oil and balsalmic vinegar to taste

Instructions

  • Using a serrated knife, slice your tomatoes in half.
  • Add cheese, salt and pepper the inside of the tomatoes.
  • Drizzle olive oil and balsamic vinegar onto tomatoes.
  • Add top tomato slice onto the bottom half, like a sandwich, and secure with a toothpick.
  • Serve and enjoy!
