Paleo Egg & Chorizo Muffins

Ingredients

  • 1 lb ground chorizo
  • 8 eggs
  • 3 oz water
  • 2 tbsp coconut oil
  • *optional- 1 1/2 cup diced vegetables
  • *optional not paleo 1/2 cup shredded cheddar cheese

Instructions

  • In a large pan, brown chorizo until cooked thoroughly.
  • While chorizo is cooking, generously grease muffin pan with cononut oil.
  • Optional- add onions, asparagus, broccoli, bell peppers or other veggie and brown with chorizo.
  • Add browned chorizo into muffin pans.
  • In a large bowl, whisk eggs and water until fluffy and slightly foamy.
  • Pour eggs into muffin tins.
  • Bake at 350 for 15 minutes or until completely cooked through (a toothpick inserted in the middle of the muffin will come out without runny egg).
  • Optional- halfway through add shredded cheddar cheese.
  • Remove and enjoy!
