10 Minute Instant Pot Mashed Potatoes

- 4-6 potatoes russet (peeled or un peeled) cleaned and scrubbed well, diced into 3" bits
- 1 ½ cups chicken stock
- 2 tbsp garlic powder
- 3 tsp celtic sea salt
- 2 tbsp fresh cracked pepper
- 4 tbsp butter
- ½ cup heavy cream
- ¼ cup sour cream
- 2 tbsp fresh diced dill
Place potatoes and stock in Instant Pot.
Set to high pressure, sealed, for 8 minutes.
Force release.
Add additional ingredients, and blend with a handheld mixer until light, fluffy, and smooth.
Serve immediately, and top with fresh dill (optional)
