Crispy Herbed Potatoes

Ingredients

  • 2 lbs potatoes fingerling , diced into 1" bites
  • 2 tbsp butter
  • 1 tbsp italian seasonings
  • 1 tbsp salt
  • 1 tbsp garlic powder
  • 1 tsp fresh cracked pepper

Instructions

  • Preheat oven to 400 degrees.
  • Cut your potatoes into 1" thick wedges.
  • Add butter to an oven-proof pan and melt on medium high heat.
  • Add potatoes to pan, heat for 5 minutes, tossing frequently, until slightly browned.
  • Sprinkle with herbs, salt, and pepper.
  • Continue to pan fry until crispy and golden brown, about 10 minutes.
  • Remove pan from stove and bake to fully cook potatoes.
  • Bake at 350 for 20 minutes, or until crunchy on the outside and soft inside.
  • Set broiler to high, and broil for 3 minutes to give potatoes a bit of extra crunch - be sure to watch carefully, to prevent burning.
  • Serve hot.
  • Bake at 425 for 10 minutes, stir, and bake for another 10 minutes until all sides are crisped.
