- 1 lbs chicken
- 8 oz diced tomatoes with green chilis
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp cayenne pepper
- 1 tsp smoked paprika
- 1 tbsp garlic powder
- 1 tsp sea salt
- 6 oz water
- 12 Tortillas corn or flour
- Optional Toppings: shredded cheese sour cream, salsa
Add ingredients to a pot, stir to mix spices and tomatoes.
Cover pot and cook on low on the stovetop for 2-2 1/2 hours, until chicken is cooked through.
When chicken is cooked to 170 degrees internally, remove from pan with tomatoes and liquid, and place into a large bowl of a stand mixer.
Add the paddle attachment and turn on medium low and spin until chicken is shredded, about 2 minutes- it helps if the chicken is still extremely hot, it makes it shred more easily.
When shredded, remove from mixer and add to tacos, enchiladas, burritos, salads, or in sandwiches!
