Ingredients

  • 2 cups old-fashioned rolled oats make sure they are certified gluten-free if you are avoiding gluten
  • 4 teaspoons ground cinnamon
  • ? cup light brown sugar lightly packed
  • 1 teaspoon baking powder
  • ½ teaspoon finely ground salt
  • 2 large eggs room temperature
  • 1 cup whole milk
  • 2 teaspoons vanilla extract
  • ¼ cup pure maple syrup
  • ¼ cup unsweetened applesauce
  • 4-5 pitted dates diced
  • 1 cup diced apple about 1 medium sized apple
  • ? cup chopped pecans

Instructions

  • Preheat the oven to 350° F.
  • Spray an 8x8 baking dish with non-stick cooking spray and set aside. 
  • In a large mixing bowl, add the oats, cinnamon, brown sugar, baking powder, and salt.
  • Mix well. 
  • In a medium mixing bowl, whisk the egg, milk, vanilla, maple syrup, and applesauce until well-combined. 
  • Add the egg mixture to the oatmeal mixture and stir well. 
  • Fold in the diced apples and dates. 
  • Pour the oatmeal mixture into prepared pan and sprinkle top with pecans.
  • Bake for 40 minutes or until a toothpick inserted in the center comes out clean. 
  • Serve immediately.
