Ingredients

lb
farro
prepared according to package directions and drained well

tablespoons
olive oil
divided

large shallot
diced finely

cloves
garlic
minced

Italian Herbs

cherry tomatoes
sliced in half

cucumber
cut into 1" bites

leaves
fresh basil
chopped

balls fresh burrata
Instructions
Prepare farro according to package directions. Drain well and place in a large bowl for serving.
In a small pan, heat 2 tbsp olive oil until shimmery on medium.
Stir in shallots and garlic and cook until softened and very lightly browned, about 2-3 minutes.
Stir shallots and onions into farro.
Add tomatoes, cucumber, basil, Italian herbs to farro and toss to evenly mix.
Chill in refrigerator 1 hour. (Optional - we like the flavor after it has had a chance to chill and settle, but this is up to you.)
Top with burrata, and break the cheese open as you serve.
Enjoy!
Notes
If you don't like burrata, or don't have any on hand, you can omit it or swap with 1 cup crumbled feta cheese.
