Ginger Sesame Chicken Meatballs Recipe

For the meatballs:
- 1 lb ground chicken or ground turkey
- ½ teaspoon salt
- 1 teaspoon ground black pepper
- ½ cup breadcrumbs or crushed saltine crackers - omit for keto
- 1 egg
- ½ teaspoon garlic powder or 1 clove minced garlic
- ½ teaspoon onion powder or 2 Tablespoons diced fresh onion
- ½ teaspoon dried oregano
- ¼ cup fresh parsley chopped
For the Glaze:
- ⅓ cup soy sauce keto- use coconut aminos
- 1 tablespoon rice vinegar
- 2 cloves garlic minced
- ¼ cup honey keto - use allulose
- 1 teaspoon sesame oil
- 1 teaspoon sriracha
- 2 teaspoons ultragel foodstarch or cornstarch slurry of 2 teaspoons cornstarch with 2 teaspoons water
- sesame seeds to garnish, optional
Preheat oven to 350 degrees, and line a baking sheet with nonstick foil or parchment paper.
Add meatball ingredients to a large bowl. Using your hands or a spoon, mix well.
Lightly cover hands in a bit of olive oil to keep chicken from sticking to your hands.
Roll chicken into 1"-1 1/2" balls, placing on lined baking sheet when formed.
Bake 18-20 minutes, until meatballs are 165 degrees internal temperature.
In a saucepan on medium high heat, combine ingredients for glaze. Whisk well to combine and bring to a boil. Let boil for about 5 minutes, until sauce has thickened.
When meatballs have cooked, remove from oven and toss in glaze.
Top with green onions and sesame seeds.
