The first chilling period gives the truffle balls time to harden, which makes coating them in chocolate easier. The second chilling period gives the chocolate time to set up.
These truffles can be stored in the freezer for up to 2 months or in the fridge for up to 7 days. They are great both ways. The truffles do not become too hard when stored in the freezer.
These truffles should not be stored on the counter because they do not use true tempered chocolate. When kept on the counter, the chocolate coating will become soft and start to melt.
The sprinkles do not add much to the truffles aside from a fun pop of color.
I found that fresh strawberries worked best in this recipe. The flavor is distributed much better compared to frozen diced strawberries.
Finely diced strawberries will be better distributed throughout the mixture.
