Strawberry Shortcake Truffles

Deliciously sweet and creamy white chocolate-dipped truffles loaded with strawberry flavor!

Ingredients

  • 3 cups crushed Golden Oreos
  • 8 ounces cream cheese room temperature
  • 1 cup diced strawberries
  • 2 cups white chocolate chips
  • ¼ cup red sprinkles

Instructions

  • In a large mixing bowl, use an electric hand mixer to combine the crushed Oreos, cream cheese, and strawberries.
  • Once the mixture is homogeneous, divide the batter into 15 balls. Place the balls on a cookie sheet lined with parchment or wax paper and allow them to chill in the freezer for 30 minutes. 
  • After 30 minutes, melt the white chocolate chips on 20 second intervals in the microwave until completely melted. Be sure to stir the chocolate after each interval.
  • Use a fork to dip each truffle ball in the chocolate before placing them back on the cookie sheet and topping them with sprinkles.
  • Allow the truffles to chill for an additional 30 minutes in the freezer.
  • Serve and enjoy!

Notes

  • The first chilling period gives the truffle balls time to harden, which makes coating them in chocolate easier. The second chilling period gives the chocolate time to set up.
  • These truffles can be stored in the freezer for up to 2 months or in the fridge for up to 7 days. They are great both ways. The truffles do not become too hard when stored in the freezer.
  • These truffles should not be stored on the counter because they do not use true tempered chocolate. When kept on the counter, the chocolate coating will become soft and start to melt.
  • The sprinkles do not add much to the truffles aside from a fun pop of color.
  • I found that fresh strawberries worked best in this recipe. The flavor is distributed much better compared to frozen diced strawberries. 
  • Finely diced strawberries will be better distributed throughout the mixture.
