  • 12 tomatillos
  • 4 garlic cloves peeled
  • 2 tbsp ground chili you can adjust for your spice tolerance
  • 1 ½ tsp ground cumin
  • 2 tbsp lime juice
  • 2 tsp lime zest
  • ¾ tsp salt adjust to taste

Instructions

  • Begin by preheating your oven to 400°F. Remove the papery husks from the tomatillos and give them a quick rinse. Cut in quarter and place them on a baking sheet and roast them in the oven until they become soft and slightly charred, which usually takes about 12 minutes.
  • You can either roast the garlic cloves alongside the tomatillos for a milder flavor or leave them raw for a spicier kick. It's all about personal preference!
  • Once the tomatillos are done roasting, let them cool down for a moment. Then, in a blender or food processor, combine the roasted tomatillos, garlic cloves, chili, cumin, lime juice, lime zest, and salt. Pulse until you reach your desired consistency. If you like it chunky, a few quick pulses will do the trick. For a smoother texture, blend a bit longer.
  • Taste it and adjust the salt or lime juice as needed to suit your taste buds.
  • Transfer your homemade Copycat Chipotle Hot Salsa to an airtight container and refrigerate it for at least 30 minutes to let the flavors meld together.
