Best Chicken Alfredo

Ingredients

  • 1 tsp olive oil
  • 6 pieces chicken thigh or breast
  • ½ cup unsalted butter
  • ½ tsp minced garlic
  • 1 tsp garlic powder
  • 1 tsp thyme
  • 1 tsp oregano
  • ¾ tsp sea salt
  • ½ tsp ground black pepper
  • 2 cups heavy whipping cream
  • 4 oz cream cheese
  • 1 cup grated parmesan cheese
  • 8 oz dry fettuccine or pasta of your choice

Instructions

  • Bring a pot of salted water to a boil and cook pasta according to package directions, drain and set aside.
  • In a medium saucepan heat oil till medium high. Season the chicken with salt and pepper. Cook chicken till browned on both sides and cooked through. Set aside.
  • Add the butter to the pan and let it melt. When hot and frothy add garlic and cook for about 3 minutes till browning and fragrant. 
  • Add the garlic powder, thyme, oregano, salt, and pepper. Stir to combine. 
  • Add the heavy cream and cream cheese. Whisk and heat until smooth. 
  • Add the parmesan cheese, stir and melt about 3 minutes till it thickens. 
  • Toss the sauce with the cooked pasta and top with cooked chicken.
