Ingredients

  • Package of Trader joes pizza crust
  • 12 oz. cooked chopped chicken
  • 16 oz ricotta cheese or mozzarella
  • 7 oz Pesto
  • 2 cups microgreens or arugula
  • One lemon
  • 1 tsp olive oil
  • Optional toppings: tomatoes and balsamic glaze

Instructions

  • Preheat oven to 400ºF 
  • Spray the pizza crust with olive oil or rub some olive oil on the crust.
  • Evenly spread the pesto on both pizza crusts, space out the dollops of ricotta cheese on top of the pesto, evenly place the chicken on top.
  • Bake for about 12-15 minutes or until the crust is golden.
  • Put your microgreens or arugula in a bowl and mix with olive oil and a ½ tsp of lemon juice.
  • Place greens on top of pizza and enjoy!
