- Package of Trader joes pizza crust
- 12 oz. cooked chopped chicken
- 16 oz ricotta cheese or mozzarella
- 7 oz Pesto
- 2 cups microgreens or arugula
- One lemon
- 1 tsp olive oil
- Optional toppings: tomatoes and balsamic glaze
Preheat oven to 400ºF
Spray the pizza crust with olive oil or rub some olive oil on the crust.
Evenly spread the pesto on both pizza crusts, space out the dollops of ricotta cheese on top of the pesto, evenly place the chicken on top.
Bake for about 12-15 minutes or until the crust is golden.
Put your microgreens or arugula in a bowl and mix with olive oil and a ½ tsp of lemon juice.
Place greens on top of pizza and enjoy!
