- Package of Trader joes pizza crust
- 12 oz. cooked chopped chicken
- 16 oz ricotta cheese or mozzarella
- 7 oz Pesto
- 2 cups microgreens or arugula
- One lemon
- 1 tsp olive oil
- Optional toppings: tomatoes and balsamic glaze
- Preheat oven to 400ºF  
- Spray the pizza crust with olive oil or rub some olive oil on the crust. 
- Evenly spread the pesto on both pizza crusts, space out the dollops of ricotta cheese on top of the pesto, evenly place the chicken on top. 
- Bake for about 12-15 minutes or until the crust is golden. 
- Put your microgreens or arugula in a bowl and mix with olive oil and a ½ tsp of lemon juice. 
- Place greens on top of pizza and enjoy!
