Ingredients

  • 2 tbsp olive oil
  • 1 lb fingering potatoes sliced into fourths
  • 1 bell pepper diced
  • 1 large onion diced
  • 8 oz chorizo sausage
  • 8 eggs well whisked
  • 1 tsp hot sauce
  • 1 cup cheddar cheese divided
  • ½ tsp sea salt
  • ¼ cup green onions sliced
  • Sour cream optional

Instructions

  • In a large, heavy pan, heat oil until shimmery.
  • When oil is very hot, but not smoking, add the fingering potatoes, stir occasionally to keep from burning.
  • When potatoes are lightly browned after about 8 minutes, add bell pepper and onion.
  • Stir occasionally and keep cooking on high until lightly browned, stirring occasionally.
  • Add chorizo to pan, fully cook until browned, about 8 minutes more.
  • While chorizo, potato, and onions are cooking, whisk the eggs, hot sauce, cheese, and sea salt till combined.
  • When chorizo is cooked add eggs to the pan and stir till eggs are cooked.
  • Top with diced green onions and sour cream if desired and enjoy!
