- 2 tbsp olive oil
- 1 lb fingering potatoes sliced into fourths
- 1 bell pepper diced
- 1 large onion diced
- 8 oz chorizo sausage
- 8 eggs well whisked
- 1 tsp hot sauce
- 1 cup cheddar cheese divided
- ½ tsp sea salt
- ¼ cup green onions sliced
- Sour cream optional
In a large, heavy pan, heat oil until shimmery.
When oil is very hot, but not smoking, add the fingering potatoes, stir occasionally to keep from burning.
When potatoes are lightly browned after about 8 minutes, add bell pepper and onion.
Stir occasionally and keep cooking on high until lightly browned, stirring occasionally.
Add chorizo to pan, fully cook until browned, about 8 minutes more.
While chorizo, potato, and onions are cooking, whisk the eggs, hot sauce, cheese, and sea salt till combined.
When chorizo is cooked add eggs to the pan and stir till eggs are cooked.
Top with diced green onions and sour cream if desired and enjoy!
