Foolproof Thyme Roast Chicken

- 1 onion skin removed and chopped
- 2 celery rough chopped
- 5 cloves garlic peeled
- 2 carrots peeled and chopped
- 2 lb whole chicken
- 4 tbsp butter
- ½ tsp sea salt
- ¼ tsp ground black pepper
- 2 tsp thyme
Preheat oven to 350 degrees.
Add vegetables to bottom of dutch oven.
Lay chicken on vegetables.
Season generously.
Add pats of butter on top of chicken
Sprinkle with thyme.
Cook until birds internal temperate reaches 160 degrees- about 1 hour.
Set broiler to high, let skin crisp for just 5-8 minutes.
Remove from heat, section and serve.
