Foolproof Thyme Roast Chicken

Delicious moist tender foolproof thyme roasted chicken on a bed of veggies is perfect every time!

Ingredients

  • 1 onion skin removed and chopped
  • 2 celery rough chopped
  • 5 cloves garlic peeled
  • 2 carrots peeled and chopped
  • 2 lb whole chicken
  • 4 tbsp butter
  • ½ tsp sea salt
  • ¼ tsp ground black pepper
  • 2 tsp thyme

Instructions

  • Preheat oven to 350 degrees.
  • Add vegetables to bottom of dutch oven.
  • Lay chicken on vegetables.
  • Season generously.
  • Add pats of butter on top of chicken
  • Sprinkle with thyme.
  • Cook until birds internal temperate reaches 160 degrees- about 1 hour.
  • Set broiler to high, let skin crisp for just 5-8 minutes.
  • Remove from heat, section and serve.
