Cheesy Veggie Home Fries

Ingredients

  • 1 onion diced
  • 2 tbsp olive oil ghee, or clarified butter
  • 2 russet potatoes washed well and diced into 1" squares
  • 1 zucchini washed well and diced into 1" squares
  • 1 bell pepper halved and diced
  • ½ cup cheddar cheese sharp
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • ¼ cup green onions

Instructions

  • In a large cast iron skillet, melt butter or heat oil until shimmery.
  • Add onions and cook until browned.
  • Set aside.
  • Add potatoes, cook on medium high until browned.
  • Remove potatoes.
  • Add zucchini and bell pepper and cook on medium high until browned.
  • Add onions and potatoes back to pan, stir.
  • Add salt and pepper to taste, and top with cheese and green onions.
  • When cheese is melted, remove from heat and serve!
