- juice of 1/2 lemon
- 1 tbsp diced oregano
- 2 tbsp olive oil
- salt and pepper to taste
- 1 large cucumber diced into 1" chunks
- 1 large bell pepper diced into 1" chunks
- 1 cup cherry tomatoes quartered
- ½ cup feta cheese crumbles
Mix the lemon juice, oregano, olive oil, salt, and pepper in a bowl.
Add the vegetables, toss in dressing and top with feta.
