Ingredients

  • juice of 1/2 lemon
  • 1 tbsp diced oregano
  • 2 tbsp olive oil
  • salt and pepper to taste
  • 1 large cucumber diced into 1" chunks
  • 1 large bell pepper diced into 1" chunks
  • 1 cup cherry tomatoes quartered
  • ½ cup feta cheese crumbles

Instructions

  • Mix the lemon juice, oregano, olive oil, salt, and pepper in a bowl.
  • Add the vegetables, toss in dressing and top with feta.
