10 Minute Instant Pot Mashed Potatoes

Ingredients

  • 4-6 potatoes russet (peeled or un peeled) cleaned and scrubbed well, diced into 3" bits
  • 1 ½ cups chicken stock
  • 2 tbsp garlic powder
  • 3 tsp celtic sea salt
  • 2 tbsp fresh cracked pepper
  • 4 tbsp butter
  • ½ cup heavy cream
  • ¼ cup sour cream
  • 2 tbsp fresh diced dill

Instructions

  • Place potatoes and stock in Instant Pot.
  • Set to high pressure, sealed, for 8 minutes.
  • Force release.
  • Add additional ingredients, and blend with a handheld mixer until light, fluffy, and smooth.
  • Serve immediately, and top with fresh dill (optional)
