Easy Doritos Chicken Casserole Recipe

Ingredients

  • 1 15.5- oz can of black beans
  • 1 15- oz can of sweet corn
  • 1 pound of chicken breast tenders about 8 tenders, cleaned and damped dry
  • 1 cup of sour cream
  • 1 14.5- oz can of crushed tomatoes
  • 1 9.5- oz bag of Doritos crumbled
  • 1 teaspoon of paprika
  • 1 teaspoon of onion powder
  • 1 teaspoon of garlic powder
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 8 ounces of Colby jack cheese freshly shredded
  • 1 10.5- oz can of cream of chicken soup
  • 4 ounces of cream cheese at room temperature
  • Olive oil for cooking

Instructions

  • Mix the paprika, onion powder, garlic powder, salt and pepper together. Rub half of the mix into the chicken breasts tenders.  
  • Heat a skillet over medium heat and add a drizzle of olive oil. Cook the chicken on each side for about 5 minutes, or until cooked through.
  • Remove and let cool enough to handle, then shred the chicken.
  • Preheat the oven to 375 degrees Fahrenheit.
  • Stir the cream cheese until smooth, then mix in the sour cream until smooth and then the remaining spice mix.
  • Mix in the cream of chicken soup, then the crushed tomatoes, then the black beans, corn, Colby jack cheese and shredded chicken together. Gently fold in half of the Doritos and spread the mix into a casserole dish.
  • Bake for 20 minutes or until the cheese starts to bubble up around the edges.
