This Doritos chicken casserole is full of flavor – creamy, cheesy, crunchy, and SO good.

The best part of this dish is it goes from the fridge to the dinner table in less than 45 minutes – and you don’t need to have experience in the kitchen to knock this recipe out of the park.

If you’d like to speed up the recipe, you can also use store bought rotisserie chicken or other shredded chicken (visit my boiled chicken recipe for the most flavorful shredded chicken, ever.)

What Flavor Doritos To Use

This recipe can actually be made with whatever chips you have on hand – we prefer Cooler Ranch or Nacho Cheesier chips.

When using Nacho Cheesiers, your casserole will have more of a cheesy flavor, an orange hue (like pictured).

When using Cooler Ranch, your casserole will have a tangier, zippier flavor and a lighter hue.

You can also use other types of corn chips for a different flavor – or try topping with some sour cream, salsa, or guacamole too!

Perfect Casserole Chicken

This chicken casserole gets tons of flavor from our perfect, easy chicken for casseroles – while you can use pre-cooked rotisserie chicken or leftover chicken, follow the steps below for our favorite chicken for casseroles.

  • Mix the paprika, onion powder, garlic powder, salt and pepper together.
  • Rub half of the mix into the chicken breasts tenders.
  • Heat a skillet over medium heat and add a drizzle of olive oil.
  • Cook the chicken on each side for about 4 minutes, or until cooked through.
  • Remove and let cool enough to handle, then shred the chicken.

How To Store Leftover Casserole

This casserole can easily be sstored for up to five days in the refrigerator in an airtight container.

To reheat, we prefer baking in the oven, or cooking in a toaster oven.

Microwaving works, but the chips tend to get soggy when storing, and really benefit from an oven or toaster oven to get them nice and crunchy again.

If you can’t get to an oven or toaster oven handy for leftovers, you can always crumble up some fresh chips on top (especially if you’re at work) for that perfect crave-able crunch!

Can I use pre-cooked chicken?

You can skip pan frying chicken for this recipe by opting for grabbing a rotisserie chicken or pre-cooked shredded chicken, even leftovers.

How can I tell when casserole is done?

The casserole is done cooking when it i hot and bubbly and lightly browning in the corners.

Easy Doritos Chicken Casserole Recipe

Delicious chicken packed crispy Dorito topped casserole is a crowd pleaser every time!

Ingredients 

  • 1 15.5- oz can of black beans
  • 1 15- oz can of sweet corn
  • 1 pound of chicken breast tenders, about 8 tenders, cleaned and damped dry
  • 1 cup of sour cream
  • 1 14.5- oz can of crushed tomatoes
  • 1 9.5- oz bag of Doritos, crumbled
  • 1 teaspoon of paprika
  • 1 teaspoon of onion powder
  • 1 teaspoon of garlic powder
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 8 ounces of Colby jack cheese, freshly shredded
  • 1 10.5- oz can of cream of chicken soup
  • 4 ounces of cream cheese, at room temperature
  • Olive oil for cooking

Instructions 

  • Mix the paprika, onion powder, garlic powder, salt and pepper together. Rub half of the mix into the chicken breasts tenders.ย ย 
  • Heat a skillet over medium heat and add a drizzle of olive oil. Cook the chicken on each side for about 5 minutes, or until cooked through.
  • Remove and let cool enough to handle, then shred the chicken.
  • Preheat the oven to 375 degrees Fahrenheit.
  • Stir the cream cheese until smooth, then mix in the sour cream until smooth and then the remaining spice mix.
  • Mix in the cream of chicken soup, then the crushed tomatoes, then the black beans, corn, Colby jack cheese and shredded chicken together. Gently fold in half of the Doritos and spread the mix into a casserole dish.
  • Bake for 20 minutes or until the cheese starts to bubble up around the edges.
