Ingredients

  • 1 ½ cup almond flour
  • 1 ½ cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 2 oz cream cheese
  • 2 large eggs
  • 1 tsp garlic powder
  • 2 tsp Italian seasonings
  • ¼ cup marinated artichokes drained well and chopped to small bits
  • Garlic butter topping:
  • 1 tbsp minced garlic
  • 4 tbsp butter
  • 1 tbsp minced chives

Instructions

  • Preheat oven to 350 degrees.
  • Line baking sheet with parchment paper.
  • In a large bowl, mix cheese, almond flour, eggs, herbs, artichoke hearts, and spices until a large ball forms and mixture is combined thoroughly.
  • Make 6 rolls from dough and place on parchment paper. Rolls don't expand too much, but give them a bit of room to expand.
  • In a small saucepan, melt butter and cook garlic and minced chives until fragrant - about 40 seconds.
  • Bake rolls at 350 for 10 minutes.
  • At 15 minutes, brush garlic butter on top of rolls.
  • Bake additional 10 minutes, until rolls are golden brown outside.
  • Top with a quick brush of additional melted garlic butter and serve!
