Preheat the oven to 350 degrees Fahrenheit and line a large baking pan with parchment paper or spray with non-stick spray.
Add the cookie mix, butter, flour and egg to a large bowl and stir to combine.
Roll the dough out into a large even circle on the prepared baking pan then cut off any rough edges.
Bake for 8-12 minutes or until the edges of the cookie turn a light golden color.
Remove it from the oven and let it cool completely.
In the meantime, beat the cream cheese in a medium size bowl until smooth then add the vanilla and salt and beat again until smooth.
Sift in the powdered sugar and beat once again until smooth.
Spread the mixture over the sugar cookie in an even layer.
Arrange the fruit in a way that you like. I added a blueberry in the center, then raspberries in a circle around it, then a circle of kiwi slices, then blackberries with blueberries in the next circle, then a circle of strawberries and finally mandarins.
Slice and serve with fresh mint leaves for garnish.
