Easy Champagne Vinaigrette

Light, crisp, tangy, and refreshing salad dressing with shallot, walnut oil, champagne vinegar, salt, and pepper.

Ingredients

  • 1 small shallot finely minced
  • 2 tablespoons of champagne vinegar
  • ¼ cup walnut oil
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt flakes or 1/2 teaspoon celtic sea salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon fresh lemon juice optional

Instructions

  • Add ingredients to blender or food processor and whiz until very finely blended and emulsified.
  • Place in jar or container with a tight lid if not serving right away and store for up to one week in the refrigerator.
  • Separation may occur in the refrigerator when storing, simply give a shake before serving.

For more kick, 1/4 tablespoon dijon mustard can be added.
