Instant Pot Whole Chicken

Ingredients

  • 1 whole chicken 3 to 4 pounds
  • ¾ cup chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tsp garlic powder
  • 1 tsp sweet paprika
  • 1 teaspoons cup olive oil
  • 2 tablespoons melted butter
  • 2 tablespoons fresh parsley optional

Instructions

  • Pat dry the chicken with a paper towel. Place in a bowl or a plate.
  • In a small bowl mix the spices with the olive oil and butter. Spread the mixture all over the chicken.
  • Place the trivet in the instant pot. Pour the chicken broth into the instant pot.
  • Transfer the chicken to a trivet inside the instant pot.
  • Close the lid, place on sealing, select high pressure, and cook for 30 minutes. When the cooking time is over, do a quick release. Remove the chicken from the instant pot and place it on a baking sheet. 
  • Place in the oven under broil for 5 to 8 minutes. 
  • Let rest for 5 minutes before serving. Sprinkle with fresh parsley if desired.
