Easy Greek Orzo Pasta Salad

Ingredients

  • 1 ½ cups orzo pasta salad
  • ¼ tsp lemon zest
  • 4 tbsp lemon juice
  • ½ cup olive oil
  • 3 tsp garlic pressed or minced
  • 1 tsp oregano
  • 1 tsp sea salt
  • ¼ tsp fresh ground black pepper
  • 1 tsp sugar
  • 2 cups cherry tomatoes halved
  • 2 cups cucumber medium diced
  • ½ cup sun dried tomatoes drained and chopped
  • ½ cup feta cheese crumbled
  • ¼ cup olives halved, black or pitted kalamata
  • 2 tbsp fresh basil minced
  • 2 tbsp fresh dill minced
  • Optional 2 tsp capers, minced

Instructions

  • Bring a pot of salted water to a boil then cook orzo for 10 minutes.
  • While orzo is cooking, in a medium bowl make the dressing by combining lemon zest, lemon juice, olive oil, minced garlic, oregano, sea salt, and sugar. Whisk to bring together.
  • When ready, drain the orzo and place it - hot - into a large bowl. Pour the dressing over the pasta and stir well.
  • As the pasta cools stir it periodically so it soaks up the dressing well.
  • Once pasta has cooled add all the remaining ingredients to the bowl and stir to combine. Taste once combined then adjust with more salt and pepper to taste. Enjoy!
