Ingredients

  • 1 rack of lamb about 1 1/2 to 2 pounds
  • 4 cloves of garlic minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of Celtic sea salt
  • ½ teaspoon of fresh cracked pepper

Instructions

  • Preheat the oven to 400°F.
  • In a small bowl, mix together the minced garlic and olive oil.
  • Season the rack of lamb with Celtic sea salt and fresh cracked pepper on both sides.
  • Heat an oven-safe skillet over high heat. Once hot, add the seasoned rack of lamb to the skillet and sear for about 2-3 minutes on each side until browned.
  • Brush the garlic and olive oil mixture over the entire rack of lamb.
  • Roast in a roasting rack to the preheated oven and roast for about 15-20 minutes, or until the internal temperature of the lamb reaches 135°F for medium-rare, flipping once in the middle of cooking at about 10 minutes. Broil at end if needed for extra browning.
  • Remove from the oven and let the lamb rest for about 5 minutes before slicing and serving.
