Jalapeño Popper Cups

Ingredients

  • 24 wonton wrappers
  • 1 tablespoon olive oil
  • 8 ounces cream cheese softened
  • 1 cup freshly shredded cheddar cheese
  • ½ cup bacon bits
  • ¼ cup minced jalapenos
  • 2 tablespoons thinly sliced green onion
  • 1 teaspoon garlic powder

Instructions

  • Preheat the oven to 375F. Grease a muffin pan with olive oil spray. 
  • Brush one side of each wonton wrapper with olive oil. Place two wrappers oil side up into each well of the muffin pan. You can use one wrapper per well if you prefer but two will give the cups more structure and more crunch. 
  • Bake for 5 minutes, or just until the cups are beginning to lightly brown. While the cups bake, prepare the filling. 
  • In a medium bowl, mix together the cream cheese, cheddar cheese, bacon bits, jalapenos, green onion, and garlic powder until well combined. 
  • Spoon 2 tablespoons of filling into the center of each wonton cup. Return the cups to the oven and bake for another 8-10 minutes, or until golden brown. 
  • Garish with a slice of jalapeno or sliced green onion and enjoy immediately.
