Crispy Tofu And Soba Noodles Stir Fry

Crispy air-fried tofu tossed with soba noodles, broccoli, celery, and onion in a savory stir fry sauce with a spicy soy finish.

Ingredients

Crispy Tofu

  • 14 oz extra-firm tofu pressed and cubed
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar or lime juice
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger or ½ tsp ground
  • 2 cloves garlic minced (or ½ tsp garlic powder)
  • 2 tablespoons cornstarch
  • Cooking spray or 1–2 teaspoons neutral oil for air fryer crisping

Noodles + Veggies

Stir Fry Sauce

Spicy Soy Sauce (to finish/drizzle)

  • 2 tablespoons soy sauce
  • 1 –2 teaspoons sriracha or chili garlic sauce to taste
  • 1 teaspoon rice vinegar optional, for brightness

Finish

Instructions

Marinate the tofu

  • Press tofu well, then cut into cubes. Toss with 2 tbsp soy sauce, 1 tbsp vinegar, 1 tbsp sesame oil, ginger, and garlic. Let sit 10–15 minutes while you prep everything else.

Air fry the tofu

  • Preheat air fryer to 400°F.
  • Sprinkle tofu with 2 tbsp cornstarch and toss until coated (it should look lightly dusty, not gummy).
  • Lightly spray the basket and tofu with cooking spray (or drizzle with a tiny bit of oil).
  • Air fry 12–15 minutes, shaking halfway, until deeply golden and crisp.

Cook the soba noodles

  • Cook soba according to package directions. Drain and rinse under cool water to stop cooking and prevent sticking. Set aside.

Make sauces

  • Whisk together the stir fry sauce ingredients until smooth.
  • Stir together the spicy soy sauce ingredients in a small bowl.

Stir fry the vegetables

  • Heat 1 tbsp neutral oil in a large skillet/wok over medium-high heat.
  • Add onion, broccoli, and celery. Stir fry 4–6 minutes until crisp-tender.

Toss noodles + sauce

  • Add cooked soba noodles to the skillet. Pour in the stir fry sauce and toss for 1–2 minutes until glossy and thickened.

Finish with crispy tofu + spicy soy

  • Gently fold in the crispy tofu (or pile it on top to keep it extra crisp). Drizzle with spicy soy sauce to taste.
  • Finish with sesame seeds (and green onions if using).

Notes

For the crispiest tofu, press well and don’t skip the cornstarch coating.
Rinsing soba is key so it doesn’t get sticky or gummy in the pan.
If you want tofu extra crispy, keep it separate and add it on top right before serving.
