Easy Red Velvet Cake Cookies

  • Preheat the oven to 350ºF. Line a baking sheet with parchment paper. 
  • In a mixing bowl mix together the cake mix, vegetable oil, eggs, and vanilla. Stir in the chocolate chips, the consistency will be thick and sticky. 
  • Lightly spray your cookie scoop then start placing the cookies about 2 inches apart on your cookie sheet. 
  • Bake 11-12 minutes, the cookies will look like they aren't done, but will continue to bake when they are on the cookie sheet once you take them out. Repeat these steps until the dough is completely gone. 
  • Let cool on the baking sheet for about 5 minutes, then move to a cooling rack to cool the rest of the way. Enjoy!
