Garlic Parmesan Roasted Carrots

Ingredients

  • 1 pound carrots peeled and cut into sticks
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried Italian seasoning optional
  • ½ cup freshly grated Parmesan cheese
  • Optional: chopped fresh parsley for garnish

Instructions

  • Preheat oven to 425°F. Line a baking sheet with parchment paper or lightly grease.
  • Add carrots to the baking sheet and toss with olive oil, garlic, salt, pepper, and Italian seasoning until evenly coated.
  • Spread carrots in a single layer. Roast for 20 minutes, flipping once halfway through.
  • Remove from oven, sprinkle Parmesan evenly over the carrots, and return to the oven.
  • Roast an additional 5–10 minutes, until the carrots are tender and the Parmesan is melted and lightly golden.
  • Garnish with fresh parsley if desired and serve warm.

Notes

  • Cut carrots evenly so they roast at the same rate.
  • Don’t overcrowd the pan — space helps them caramelize.
  • Add Parmesan toward the end to prevent burning.
  • Reheat leftovers in the oven or air fryer to keep them crisp.
