Garlic Parmesan Roasted Carrots

carrots
peeled and cut into sticks

dried Italian seasoning

freshly grated Parmesan cheese
Optional: chopped fresh parsley
for garnish
Instructions
Preheat oven to 425°F. Line a baking sheet with parchment paper or lightly grease.
Add carrots to the baking sheet and toss with olive oil, garlic, salt, pepper, and Italian seasoning until evenly coated.
Spread carrots in a single layer. Roast for 20 minutes, flipping once halfway through.
Remove from oven, sprinkle Parmesan evenly over the carrots, and return to the oven.
Roast an additional 5–10 minutes, until the carrots are tender and the Parmesan is melted and lightly golden.
Garnish with fresh parsley if desired and serve warm.
Notes
Cut carrots evenly so they roast at the same rate.
Don’t overcrowd the pan — space helps them caramelize.
Add Parmesan toward the end to prevent burning.
Reheat leftovers in the oven or air fryer to keep them crisp.
