- 1 rack of lamb about 1 1/2 to 2 pounds
- 4 cloves of garlic minced
- 2 tablespoons of olive oil
- 1 teaspoon of Celtic sea salt
- ½ teaspoon of fresh cracked pepper
Preheat the oven to 400°F.
In a small bowl, mix together the minced garlic and olive oil.
Season the rack of lamb with Celtic sea salt and fresh cracked pepper on both sides.
Brush the garlic and olive oil mixture over the entire rack of lamb. Let marinate for about 40 minutes on the counter to bring the meat to room temperature.
Heat an oven-safe skillet over high heat. Once hot, add the seasoned rack of lamb to the skillet and sear for about 2-3 minutes on each side until browned.
Roast in a roasting rack to the preheated oven and roast for about 15-20 minutes, or until the internal temperature of the lamb reaches 135°F for medium-rare, flipping once in the middle of cooking at about 10 minutes. Broil at end if needed for extra browning.
Remove from the oven and let the lamb rest for about 5 minutes before slicing and serving.
