Ingredients

  • 8 ounces kale stems removed and leaves chopped
  • 1 medium Granny Smith apple cored and diced
  • ½ cup dried cranberries or dried cherries
  • 2 ounces feta cheese crumbled
  • 1 cup walnuts

For the dressing:

  • 3 tablespoons olive oil
  • 1 ½ tablespoons apple cider vinegar or white wine vinegar
  • 1 tablespoon smooth Dijon mustard
  • 1 ½ teaspoons honey or maple syrup
  • Sea salt and freshly ground pepper to taste

Instructions

  • In a large mixing bowl, combine the kale, diced apple, dried cranberries, and crumbled feta cheese.
  • In a small mixing bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey or maple syrup, salt, and pepper until well combined.
  • Pour the dressing over the kale salad and toss to coat the ingredients evenly.
  • Let the salad sit for at least 10 minutes before serving to allow the flavors to meld together.
  • Serve the salad as a side dish or a main course, garnished with additional feta cheese or nuts if desired.
