- ½ cup salted butter softened
- ½ cup white granulated sugar
- 2 cups all-purpose flour
- 1 cup light brown sugar
- 1 cup molasses
- 1 ½ cups crushed pecans
- 3 large eggs
- 1 teaspoons vanilla extract
Preheat the oven to 350°F.
In a medium sized mixing bowl, prepare the shortbread crust. Use an electric hand mixer to combine the butter, granulated sugar, and flour until the butter is reduced to pea sized pieces.
Press the crust into a 9x13 inch glass baking dish and bake for 20 minutes.
While the crust is baking, whisk together the brown sugar, molasses, crushed pecans, eggs, and vanilla until homogenous.
Remove the shortbread crust from the oven and pour the pecan mixture into the pan. Return the pan to the oven and bake for an additional 25 minutes.
Allow the bars to cool on the counter for an hour before slicing and serving. Enjoy!
