Ingredients

  • juice of 2 lemons
  • 1 cup ground tahini
  • 1 tablespoon salt
  • ½ cup - 1 cup water
  • 2 teaspoons garlic powder or 3 cloves garlic minced, optional
  • 1 teaspoon ground sumac optional
  • ¼ cup minced parsley optional

Instructions

  • In a large bowl stir together tahini paste and lemon juice. Tahini will become thick and clumpy.
  • Season with salt and optional seasonings.
  • While stirring constantly, pour in a little cold water and keep adding cold water, while stirring, until all lumps are gone, the sauce is smooth, and sauce is a bit runny. This might take more or less water - so keep stirring as you go and add water if needed.
  • Store in airtight container for up to a week. If sauce thickens, it can be thinned with more ice cold water.

Notes

Cold water must be used - warm or lukewarm water will cause tahini to seize up and get chunky.
