These vegan veggie packed low carb tarts are loaded with seasonal squash and zucchini as well as fresh basil and tomaotes - yum!

You will need: Puff Pastry Zucchini Squash Eggplant Onion Bell Pepper Oil Salt and pepper Garlic Tomato sauce Fresh Basil

Toss the sliced squash, zucchini, eggplant, bell peppers, and onions in oil, salt, and pepper

Roast veggies in the oven with the garlic until soft

Combine the roast garlic and tomato sauce, add some to baked puff pastry

Combine the tomatoes, oil, salt, and fresh basil

Bake tart with roasted vegetables then add the tomatoes and basil mix

Bake again until tomatoes are blistered
